Watercress - With its crisp leaves and dark-green colour, watercress represents some of the most nutrient-rich foliage ever to grace a salad bowl. The darker and more peppery tasting the leaves, the better it is for you. Bursting in vitamin C (as much as oranges), calcium (more than milk), iron (more than spinach) and folic acid, it's great for flushing out nasty toxins after a hangover. Chop it up to add flavour and nutrients to salads, sandwiches, soups, pastas and risottos - especially anything rich or oily.

When buying cooked and raw prawns, look for those that are firm, with feelers and eyes intact. They shouldn't have black discolouration, be slimy or smell unpleasant. Ideally, you should consume prawns within 3 days of purchase. Store prawns in their shells, in a bowl of ice and water in your refrigerator. Or if keeping them for more that 24 hours, prawns should be refrigerated in a bowl of ice and salt water.

Spices are the buds, bark, roots, berries and seeds of a plant used for flavouring cooking, for example Coriander Seeds are considered a spice.

Herbs are the leaves of plants, and therefore Coriander Leaf is a herb.
